Jack Soup

from the kitchen of Miranda

1 lb. ground beef
2 onions, chopped
4 cups water
1 quart tomatoes
4 potatoes, cubed
4 carrots, cubed
1 tsp. salt
1 bay leaf
2 cups cubed Monterey Jack cheese

Brown ground beef with onion. Add all remaining ingredients except cheese. Heat to boiling. Reduce heat and simmer 1 ½ hours. Remove from heat and add cheese. Serve with cheese partially melted.
